Annual honey production of Croatia is estimated around 2050 tons and it makes around 0, 16% of World honey production and around 0, 7% of European honey production. That shows that Croatian honey production is very difficult to become competitive, either with quantity as well with price. It is inevitable to turn to proper resources and autochthonous products that Croatia can offer. Natural necessity to emphases the geographic origin of certain agricultural or food product, occurs when product of certain geographic circumference becomes more needed at the market compared to similar products because of its special properties or elevated quality. It is completely in accordance to European trends in food production sector that are trying to protect particular food productions. Their size and characteristics are determined by their geographic surround in which they are developing. "Goranski medun" or fir tree honeydew honey (Abies alba) coming from Gorski kotar region of Croatia is very appreciated at the markets of Germany and Austria. Several exports of major quantities of this honey to those markets have been accomplished. Sage honey (Salvia oficinalis), coming from Croatian islands and coastal region is highly appreciated because of its salutary characteristics and special aromatic profile. The fact is that those are high quality honeys originating from botanical species characteristic for Northwest Croatia. They are representing peculiar product at the honey market whose characteristics should be kept persisting and recognizable. The selection of the particular compounds and their limits, as objective indexes of the geographic origin and authenticity determination is based upon the results of perennial studies. It is obvious that those characteristics should be uniform and persistent during the number of years in order to obtain and stabilize perception of the consumers. The aim of this study was to enfold present experience in this field with special emphases to fir tree honeydew honey and sage honey, honeys characteristic for Northwest Croatia.
