Determination of the glyceamic index and glyceamic load of selected biscuits in healthy persons

The glyceamic index (GI) is a measure of the food power to raise blood glucose concentration after a meal. The glycaemic index was developed to help people with diabetes to improve their blood glucose control in order to avoid long-term complications. For many foods in the European Union, as well as in Croatia, the GI has not been defined yet. The aims of this study were to determine the GI of three different biscuits that are available on Croatian market and the difference between them regarding chemical composition. Two biscuits were with inulin for diabetic people obtained from different manufacturers (B2 and B3) and one regular biscuit (B1). Twelve healthy, non-smoking volunteers were included in this study. Their ages ranged from 21-38 years old and their body mass index (BMI/ kg/m2) from 18.47- 28.33. The volunteers were fed with a portion of biscuits containing 50 g of available carbohydrates on separate occasion during the period of two weeks. Capillary blood glucose was measure from finger-prick samples in fasted volunteers at 0, 15, 30, 45, 60, 90 and 120 min after starting to eat each biscuits. The mean values of the GI for B1, B2 and B3 were 77.39, 73.96 and 56.93, respectively. Glyceamic load (GL) of the B1 was high (17.28) but of the B2 and B3 low (<10). There was no significant different between the GI determined for B1 and B2, but the difference of GL values between them was significant (p<0.05).
