Towards the cost-effective approach to the detection of several nutritionally important antioxidants in fruit
This study describes the use of photoacoustic and optothermal spectroscopy to assay lycopene, beta carotene and anthocyanine in the fresh homogenates prepared from red-fleshed watermalon, mango, strawberry and black berries. The outcome of the study suggests that the two methods may evolve to a reliable, rapid and cost-effective approach to the detection of nutritionally important antioxidants in the fruit specified above.
