Electrochemical and antioxidant properties of (+)-catechin, quercetin and rutin
Electrochemical and antioxidant properties of natural occurring polyphenols ((+)-catechin, quercetin and rutin) were investigated. Electrochemical studies were performed in polyphenolic solutions of concentrations, c = 1•10-6 mol dm-3 ... 1•10-3 mol dm-3 in pH interval from 2.5 to 8.0 at constant ionic strength (Ic = 0, 1 mol dm-3). The following electrochemical techniques were used: cyclic voltammetry, linear sweep voltammetry, differential pulse voltammetry and square-wave voltammetry. It was determined that the electrochemical oxidation process of investigated polyphenols on the glassy carbon electrode is reversible, pH dependent and the products of electrochemical oxidation are strongly adsorbed on the electrode surface. Antioxidant properties of the mentioned polyphenols were studied by UV/VIS spectroscopy with the reagent, ABTS. It was determined that quercetin has the highest antioxidant capacity, followed by (+)-catechin and rutin.
