Comparative study of physico-chemical and sensory properties and microbiological quality of berry fruits upon species, cultivar and type of farming during one week storage at 4oC

Berry fruit such as strawberry, raspberry, blackberry and blueberry are very delicate with very short shelf life as fresh fruit. But among them there are differences because of different morphological features, as well as specificity of the chemical composition. The aim of this comparative study is to investigate the quality of several cultivars of strawberry (Diamant, Alba, Clery Joly, Galia), raspberry (Willamette, Tulamen, Sugana), blueberry (Sierra, Duke, Bluecrop), and blackberry (Chester, Thornfree, Čačanska Bestrna, Black Athenas) from conventional (all listed cultivars except Diamant) and organic (Chester, Diamant, Alba, Willamette, Sierra, Duke, Bluecrop) farming in order to determine the impact of fruit species, cultivar and type of farming on their shelf life. Quality is monitored by the physico-chemical properties such as dry matter, pH, hardness, colour, and by sensory evaluation. Furthermore microbiological analysis was performed, too. Fruits were stored in refrigerator at 4 oC during seven days, and analyses were done the first, the fourth, and the seventh day of the storage. Samples of organic farming showed higher contamination with bacteria from ten to hundred times compared to conventional farming. On fruit from organic farming prevalent were yeasts and molds, while only yeasts prevailed on the fruit from conventional farming. From all tested fruit species blueberries have proved the most stable during storage at 4oC, especially the cultivar Duke of organic farming. For other species, no positive effect of organic farming on tested samples and parameters was observed. Based on determined parameters, Thornfree proved to be the most stable cultivar of blackberries. Cultivar Tulamen among raspberry was the most stable and best sensory evaluated. Strawberries are not shown greater stability during storage, and the best was the cultivar Joly. Strawberries did not show greater stability during storage, and the best was the cultivar Joly.
