The Potential of Agro-industrial Waste as a Source of Dietary Functional Components

In recent years, agro-industrial waste gained a significant interest as a secondary raw material due to the substantial amount, low price, renewable nature and environmental issues linked to the current most common ways of disposal. Interesting chemical composition, comprising secondary metabolites and structural carbohydrates as target compounds with functional potential, have opened vast opportunities for its further processing into valuable products. Therefore, the aim of this work was to evaluate the chemical composition of sugar beet pulp (SBP), walnut shell (WS) and onion peel (OP) by means of inorganic content, organic matter composition, as well as to determine its bioactive potential. Moisture and ash content analyses were conducted using standard analytical procedures. Organic matter was defined as fat, crude protein and crude carbohydrates fractions. Carbohydrate analyses included determination of insoluble and soluble fibre (AOAC 2011.25) and determination of extractable sugars (HPLC-RID). Total polyphenols and flavonoids in aqueous and ethanol extracts were evaluated spectrophotometrically as well as the antioxidant capacity using established radical scavenging activity assays against 2, 2- diphenyl-1-picrylhydrazyl (DPPH) and 2, 2- azinobis( 3-ethylbenzthiazoline-6-sulphonic acid) diammonium salt (ABTS) radicals. The obtained results revealed the predominant content of crude carbohydrate fraction in all samples. This fraction was markedly different in fibre and extractable sugars contents and composition for all evaluated samples, exhibiting WS as the highest in insoluble fibre content (93.7% on crude carbohydrate basis (ccb)), SBP as the richest source of soluble dietary fibre (29.6% ccb), while OP had the highest content of extractable sugars (11.3% ccb). Regarding the total polyphenolic content and antioxidant capacity, OP showed predominantly high bioactive potential, evaluated as gallic acid equivalents (66.84 mg/g of sample dry matter). The overall results confirmed the evaluated agro-industrial wastes as highly potent substrates for further carbohydrate (polysaccharide) processing into dietary functional fragments, such as oligosaccharides, as well as a source of valuable bioactives.
