Effect of fermanted milk on induction of modilation
The human diet which is complex mixture of chemical entities, containsa anticarcinogens. Dietary intake of natural antioxidans may be yoghurt against known mutagens sodium azide (NaNO_3) and 4-nitroquinaline N-oxide (4NQO) were investigated using 4 strains of salmonella typhimurium (TA100, TA1535, TA98, TA1538). The mutagen solution was incubated for 1h at 37^Cwith yoghurt before performing the Ames test. Concurrent negative(S.typhimurium alone or S.typhimurium with yoghurt) and positive (S.typhimurium with mutagen but withought yoghurt) controls were also performed. The mutagenic activity of 4NOO in all strains and NaNO_3 instrains TA100 and TA1535 was reduced. With our present knowledge itis pnly possible to speculate on the mechanisms of antimutagenic activity of fermanted milk. Possible both direct inactivation and inhibition of enzymatic activity of the mutagen could be involved.
