Comparison of the neutral lipid composition of the plasma membrane of baker's and brewer's yeast
The aim of this work was to analyse neutral lipid of the plasma membrane of two industrial yeast strains grown under aerobic (baker's yeast) and anaerobic (brewer's yeast) conditions. The analysis of neutral lipid fraction revealed the presence of mono-, di-, and triacylglicerols, squalene, lanosterol, ergosterol, steryl esters and free fatty acids.The characteristic of neutral lipid fraction of baker's yeast was high content of ergosterol, the main sterol in yeast. On the contrary, the main characteristic of neutral lipids of the brewer's yeast plasma membrane was low content of ergosterol and high content of squalene.
