Relation of Aspergillus flavus biomass to the accumulation of aflatoxins in green coffee beans
The correlation of mycelial growth with the accumulation of aflatoxins B1 and G1 (AFB1 and AFG1) by Aspergillus flavus on decaffeinated and regular green coffee beans was subject of this study.Experiments were carried out in a stationary culture, at temperatures from 20oC-30oC and a water content in the substrate from 15%-40%.The amount of biomass was estimated by measuring the chitin content, and the aflatoxin concentration by means of a fluorodensitometer. It was found that caffeine inhibits the synthesis of both investigated toxins, whereas it had practically no influence on biomass growth. After 28 days of cultivation at 25oC the concentration of AFB1 was reduced by 20-27%, and at 30oC by 25-30%, relatively to the highest values obtained in the course of biosynthesis.Under the same growth conditions the concentration of AFG1 was reduced by 15-18% at 25oC, and by 20-26% at 30oC.
