The results of voltametric determination of lead and cadmium in the flour and bread are different depending upon the wet and dry method of digestion of the biological matrix
Lead and cadmium in flour and bread were determined by square wave voltametry. Compared to the NIST standard, lead and cadmium content of flour and the corresponding breads were less then 4% when the samples were ashed by the wet method and 16% less when samples were ashed by the dry method. The wet ashing method would yield higher and closer to the NIST standard lead and cadmium values in te flour and bread then dry ashing methode. Thes results may be important when assessing the maximal allowable concentrations of lead and cadmium in the human diet and the possible risks of human environmental exposure.
