Mobile vinificator – „ Vinimob“ for the production of Malvazija istarska wine
The aim of this research was to investigate the influence of pre-fermentative cryomaceration on the extraction of varietal aroma compounds (monoterpenes) and dry extract contents, and to enquire possible changes in fermentation aroma compound concentrations in Malvazija istarska wines due to the cryomaceration process. Experiment was carried out on three different locations. Pre-fermentative cryomaceration was conducted in mobile vinificator – „ VINIMOB“ (20h/6º C). Wines produced in „ Vinimob“ had higher free and bound monoterpene contents, higher dry extract contents, while no regularity in fermentation aroma compound concentration changes were observed.
