Many of Fusarium species produce mycotoxins that are found as a contaminants in the harvested products and which have been harmful for humans and animals The main objective of this study was to determine DON content in samples of wheat flour commercially available in eastern Croatia. The present study concludes that the highest incidence and concentrations of DON were found in samples from 2002 harvest with average levels three to four times higher compared with samples from the other two years. The May and June of 2002 were wetter and warmer than normal. Such conditions favour infection of cereals by DON-producing Fusarium species. Also DON contamination of wheat flour was lower with decreasing ash content. High incidence rate of DON in tested samples emphasize the need for regular screening for DON in cereal products and the need for monitoring activities to ensure the safety of cereal grain products.
