Muscle Fiber Characteristics of Black Slavonian Pig – Autochthonous Croatian Breed
The histochemical and histomorphological characteristics (diameter and proportion of red slow-twitch oxidative (SO), white fast-twitch glycolytic (FG) and intermediate fast-twitch oxidative glycolytic (FOG) fibre types) of M. longissimus dorsi (MLD) in Black Slavonian Pig (BS, n=10) in comparison to modern crossbred (Large Weight x Swedish Landrace sired with Duroc ; CB, n=8) pigs were analysed. BS pigs (153.8 average live weight/18 mounths of age) and CB pigs (182.1 kg average live weight/18 mounths of age) were reared and fattened in outdoor production system under the same feeding conditions. The FG fibers of large diameter dominate in MLD of both BS and CB pigs (69 and 75.8 % of total cross sectional area). The proportion of FG fiber was lower (69.10 vs. 76.5 %, P<0.01) and their diameter was smaller (68.5 vs. 72.10 μ m, P<0.05) in BS than CB pigs. Also, BS pigs showed higher proportion of SO (11.7 vs. 8.4 %, P<0.01) and FOG (19.6 vs. 15.8 %, P<0.01) fibers than CB pigs. The diameter of SO (64.0 vs. 67.5 μ m, P<0.05) but not FOG fiber was smaller in BS than CB pigs.
