Separation of glucose from fuctose in honey and decalcification of honey on ion exchange resins

Separation of glucose from fructose in honey is an important operation in enzymatic isomerisation of glucose to fructose during the production of high-fructose honey. In this work we have observed the separation of glucose and fructose in honey on various types of kation exchange resins in Ca2+ form and anion exchange resins in bisulfite form. All the experiments were performed in a heated glass column on 40 oC ; honey was added on the top of the column and then washed out with demineralised water. Experiments with reverse flow were also performed. The influence of the water flow rate and the height of the resin bed layer on the efficiency of the separation was observed. The best results were achieved with gel-structure anion resin Amberlite IRA 400 in bisulfite form while macroporous resins failed to separate at all. Since honey contains Ca2+ ions (cca 60 mg Ca2+ per kg of honey) which repress isomerisation of glucose to fructose with glucose-isomerase, we tried to remove calcium from honey with ion exchange resins Amberlite IR120, Lewatit SP 120 and Dowex C-500 ES UPN in K+ and Na+ form. The results suggest that complete removal of calcium ions with ion exchange is possible.
