Olive oil is key component of the traditional Mediterranean diet, which is believed to be associated with a relatively long life in a good health. Olive oil as important and valuable commodity is often adulterated. In this presentation it will be discussed: – way of production with respect to olive oil quality, – chemistry of olive oil, its composition, possible ways and detection of adulteration, – influence of olive oil components on health.
