Production of soluble dietary fibres from sugar beet pulp with Betanaza T enzyme in the extrusion process

Considerable quantites of dietary fibres are contained in sugar beet pulp as by products in saccharosse production. The sugar beet pulp used in the extrusion experiments were composed of 0.7943 mass fraction of total dietary fibres, where lignocellulose took 0.2229, pectin material 0.3253, and hemicellulose 0.2460. The sugar beet pulp was extruded with/without Betanaza T enzyme (Pliva, Zagreb) in the twin screw coorotating extruder made by APV Baker, MPF 50 :15 type (Great Britain). The influence of mass fraction of water in extruder (0.31, 0.37, 0.43, 0.49 and 0.55), the added quantity of Betanaza T enzyme (7.2 g kg-1 and 14.4 g kg-1), and the extrusion temperature (85 °C, 100 °C and 150 °C) on the input quantity of specific mechanical energy and soluble dietary fibre content in extrudated products were observed. The extrusion was performed under constant feeding of dry material into extruder of 19.09 kg h-1 and under constant screw speed (290 min-1). The die diameter was 2 mm. The soluble dietary fibres content in extrudate was increasing with increasing of added quantity of Betanaza T enzyme (14.4 g kg-1), and decreasing of the mass fraction of water quantity (0.31), as well as with increasing of input quantity of specific mechanical energy.
