Specific rotation and carbohydrate profile of Croatian unifloral honeys
Specific rotation results from the type and quantity of carbohydrates present in honey. Objectives of this work were to determine specific rotation and carbohydrate profile of selected Croatian unifloral honey types (sage, acacia and chestnut) as well as the contribution of particular carbohydrates to the overall specific rotation. Content of carbohydrates was determined by HPLC method and specific rotation by polarimeter. Fructose and glucose content was typical for the type of honey and comparable to the literature values. Other saccharides revealed specificities in the presence and content which have considerable impact on specific rotation. Weak positive correlations between specific rotation and sucrose, melezitose and raffinose content were found.
