Effect of slaughter age on meat quality of Simmental bulls and heifers
The aim of this study was to examine the effect of slaughter age on meat quality of Simmental bulls and heifers. To compare the quality characteristics of different slaughter age, one thousand two hundred cattle were divided in two groups. Bulls were slaughtered at age of 13-14 and 17-18 months, while heifers were slaughtered at the age of 12-13 and 16-17 months. Quality indicators such as pH, EC and meat colour values were measured 24 h post-mortem on m. longissimus dorsi. Sex had a significant effect on beef meat quality, while different slaughter age of the cattle had slight effect. The results indicate that it is possible to increase slaughter age of Simmental bulls and heifers, without a relevant worsening of beef meat quality.
