Wine Analysis by 1D and 2D NMR Spectroscopy
We have measured 1H and 13C NMR spectra of selected Slovenian wines. Spectra clearly show the differencies of chemical composition of wines depending on variety, vintage and geographical areas. With the aid of 2D experiments COSY, HSQC and HMBC on the sample of Sauvignon from the Drava region, vintage 1994, we assigned 1H and 13C resonances of alanine, glutamine, valine, leucine, isoleucine, citrulline, ethanol, glycerol, buthylenglycol and of acetic, tartaric, lactic, succinic, butyric, and malic acids.
