Honey production safety management in the bottling plant of a family farm in the Varaždin county

The concept of ensuring the food safety HACCP (Hazard Analysis Critical Control Point) – the system of analysing hazard and critical control points is based on preventive actions and control of all the production procedure processes. Implementation of the system in the process of black locust honey production was carried out in accordance with the reference documents and applicable regulations of the Republic of Croatia. Black locust honey is one of the most valuable types of honey in the European market, and its features are extremely appreciated by the consumers. Black locust is the most lavish pasture in the continental parts of Croatia. Therefore, the aim of this paper is to present the establishment and implementation of the HACCP system in the black locust honey production process in a bottling plant of a family farm from the area of three locations of black locust honey pastures in the Varaždin County. Botanical origin of the raw material – black locust honey – from all the three locations was confirmed and defined by conducting the pollen and physicochemical analyses (water, free acids, electrical conductivity, reducing sugars, sucrose, diastasis, and HMF (hydroxymethylfurfural) according to the quality requirements set by the Regulations. This confirms the labelling and the name of the product which are complemented with data relating to its floral or herbal origin. The honey is fed into the primary packaging. By establishing and continuously implementing the food safety system the production security management of the black locust honey is achieved in the bottling plant of the family farm. This ensures the responsibility of the family farm to ensure not only the quality of the raw material obtained by good beekeeping practices in primary production, but also the manufacturing process of a healthy final product – black locust honey – which confirms its labelling.
