High Voltage Electrical Discharges for Polyphenols Extraction from Grape Skin Pomace

Grape pomace is the residue remaining after the grapes have been pressed for wine-making and consists of residual skins, pulp, seeds and stems. These grape by-products provide an abundant source of bioactive compounds that exhibit antibacterial, antiviral and antioxidant properties and can prevent cardiovascular diseases. Therefore, these waste materials represent an inexpensive natural source for the extraction of polyphenols with potential health promoting and disease protective properties. Recently, novel electrotechnologies such as high voltage electrical discharges (HVED) have been used for extraction of polyphenols from plant material. HVED application has both electrical and mechanical effects on the product. This technique introduces energy directly into an aqueous solution through a plasma channel formed by a high-current/high-voltage electrical discharge between two submerged electrodes. As a result of HVED, complex phenomena like shock waves and cavitation are occurred, which cause mechanical damage of plant tissues and disintegration of cell walls. Accordingly, the application of pulsed electrical treatments is particularly attractive as novel extraction technique with the aim to enhance the solute extraction with lower energetic costs, and better extract quality. Therefore, the aim of this work was to investigate the HVED assisted extraction efficiency under different operating parameters in order to obtain red grape pomace extracts with high polyphenols content. The effects of the solvent polarity (10, 30 and 50% aqueous ethanol (v/v)), extraction time (5 and 10 min) and frequency (60 and 120 Hz) were studied. Obtained results indicate that with higher solvent polarity, concentrations of polyphenols were increased. Higher extraction time also improved the polyphenols extraction, but only with 10% and 30% ethanol. Regarding the frequency, higher frequency resulted with higher polyphenolic concentrations but only with 10 % ethanol. Finally, HVED assisted extraction can be proposed as a novel extraction technique to improve the polyphenols yield from red grape pomace.
