Zinc in food composition databases

An essential mineral of "exceptional biologic and public health importance" is Zinc and its deficiency affects about two billion people in the developing world and is associated with many diseases. In children it causes growth retardation, delayed sexual maturation, infection susceptibility, and diarrhea, contributing to the death of about 800, 000 children worldwide per year. Enzymes with a zinc atom in the reactive center are widespread in biochemistry, such as alcohol dehydrogenase in humans. Consumption of excess zinc can cause ataxia, lethargy and copper deficiency. So, in is very important to know the exact amounts of this mineral that is consumed, daily. Precise data on food chemical composition is crucial for any quantitative nutrition research and indispensable for evaluation and planning of menus. Moreover, exact food chemical composition is of outmost importance in composing specific diets that could be low on certain essential nutrients. Therefore, this research evaluated some specific menus (pregnant women ; male athletes and children aged 8-9) using three different food composition databases (FCDB): the Croatian, the official Danish Food Composition Database and the FCDB of the United States Department of Agriculture (USDA). Significant differences (p<0.05) were determined in evaluated offers for the same target group when using different FCDBs. Furthermore, in some menus the quantities of Zinc intake have not reached official daily recommendations needed for prevention of non-communicable diseases. Those differences are an outcome of different methods used in detection of Zinc in food what should be unified to avoid significant differences and assure adequate intake of this important micronutrient.
