Cleaning of Surfaces
Construction materials coming into contact with food (including associated adhesives) must be food grade (complying with European Food Safety Authority (EFSA) or Food and Drug Administration (FDA) requirements). The selection of construction materials depends greatly upon the dry materials, method of cleaning, and cleaning agents to be used. Regulation (EC, 2004a) requires that those surfaces that come into contact with food must be maintained in a sound condition, be easy to clean and, where necessary, to disinfect. This requires the use of smooth, washable materials that cannot make the contacting product toxic.
