Development of biotechnological process of phenolic acids production from grape pomace

Grape pomace is a lignocellulosic-type of waste that remain after winemaking process representing a rich source of bioactive phenolic compounds. Lignin fractions of material contain different phenolic components, mainly phenolic acids, but extraction of these compounds is difficult owing to lignin structural complexity and insolubility. Solid- state fermentations (SSF) have great potential of converting inexpensive agro-food industrial residues into a great variety of valuable compounds in an environmentally friendly manner. In this work, grape pomace was used as substrates for Trametes versicolor growth in solid-state conditions during fifteen days with the aim of phenolic acids production (gallic acid – GA, syringic acid SA, vanillic acid – VA, p coumaric acid - p-CuA, p hydroxibenzoic acid - p-HBA). Phenolic acids were extracted from grape pomace before, during and after SSF by 50 % aqueous ethanol at 80 °C during two hours, and extracts were analyzed by gradient UHPLC method. Initial concentrations of phenolic acids in grape pomace were 282.83 microg/gdb, 90.66 microg/gdb, 29.38 microg/gdb, 7.28 microg/gdb and 1.78 microg/gdb for GA, SA, VA, p-CuA and p-HBA, respectively. Extraction yield of phenolic acids from biologically treated grape pomace was higher up to 1.53-, 1.04-, 1.15-, 1.20- and 4.97-fold for GA, SA, VA, p-CuA and p-HBA, respectively.
