Characterization of some Dalmatian Red Wines

Experimental research was done on red wine cultivars Plavac mali, Babić, Cabernet Sauvignon, Merlot i Vranac (Vitis Vinifera L.) through three vintage years. The purpose of this research is to identify analytical characteristics which distinguish these wines according to cultivars of grapes and vintage years. In this study are determined the following indicators: total phenols, total anthocyanins, absorbance at 280 nm and absorbance at 420 nm and 520 nm, colour intensity and hue as well as macro (Cu, Fe, K, Na, Mg, Ca) and micro (Zn i Mn) elements. The content of these compounds may serve in determineting of authenticity of wine and it is important beacuse of theirs influence on sensory properties of wines. In determination of total phenols and total anthocyanins were used spectrophotometry methods. The content od macro and micro elements were determined by atomic absorption spectrophotometry (AAS) methods and flame photometry. In date processing were used middle value of the observed variables and their standard deviation and non-parametical tests in statistical analysis. For comperise of the results of research were used Mann-Whitney test. In wine of cultivar of Plavac mali was determined significantly more total phenols (3330 mg/L -543, 99) and absorbance at 280 nm (56, 56 - 10, 08) as total tannins index. The results of analysis show significantly more metals in wine of cultivar Merlot Zn (0, 669 mg/L - 0, 0062), Cu (0, 689 mg/L - 0, 491) i Mn (1, 19 - 0, 061). The difference among wines were determined by the Kruskal-Wallis H analysis of variance according the vintage year.
