Development of three cereal/rice based products with probiotic strain Bifidobacterium animalis subsp. lactis BB-12
The aim of this research was to develop new cereal/rice products, with probiotic strain Bifidobacterium animalis subsp. lactis BB-12. These products are intended for infants after 4 months of age. The influence of three different food matrices on the general, technological and functional properties of probiotic strain Bifidobacterium animalis subsp. lactis BB-12 was investigated. Therefore, phenotypic and genotypic characterization of B. animalis subsp. lactis BB-12 was performed after its isolation from samples of three different products. Furthermore, the influence of different food matrices on functionality of this probiotic culture in the products was carried out for the following properties: antibiotic resistance, survival in simulated conditions of the gastrointestinal tract, adhesion properties, antagonistic activity against pathogenic and undesirable microorganisms, deconjugation of bile salts and assimilation of cholesterol. The number of live B. animalis subsp. lactis BB-12 cells in samples of rice flakes with banana, rice flakes with apple and carrot, and in samples of three cereal flakes (rice, millet and buckwheat) was higher than the minimal required number of probiotic cells per gram of product (1x106 CFU/g) during 101 weeks of storage at room temperature and at 37°C. As a result of this research, three new probiotic products were developed and placed on the market: “Lino three cereals (rice-millet-buckwheat)”, “Lino rice with banana” and “Lino rice with apple and carrot”.
