The ten winter wheat cultivars produced during two vegetation periods (1993/94, 1994/95) was used in this study. The influence of the amount of rain and temperature during the period of grain filling on the wheat properties were monitored. The following properties were defined in samples: yield, test weight, thousand-kernel weight, protein content, sedimentation value and wet gluten. Rheological quality parameters of dough was carried out by the Brabender farinograph and extensograph.
The obtained results show that the analysis of climatic conditions in the period of grain filling should be used for flour quality evaluation. |
