Stabilization of β-glucanase and its effect on the substrate hydrolysis pattern
The enzyme preparations for barley 1, 3 ; 1, 4-β-D-glucan degradation are complexes of several β-glucanases with endo and exo-type activities. During stabilization procedure, the enzymes are subjected to environmental changes such as temperature, ion strength etc. They could alter the proportion of enzymes, and consequently, produce certain changes in substrate hydrolysis pattern. Thus, the effect of NaCl and of spray-drying on β-glucanase (Aspergillus niger) storage stability as their influence on the pattern of the substrate hydrolysis was studied. Possible implications of changed hydrolysis pattern, caused by stabilization procedure, on the efficiency of the enzymes used for specific purposes were discussed.
