Sažetak:
One of the important-basic indicators of milk and dairy products quality is its shelf-life. The quality is not a matter of choice but because of whole number of economical reasons and regulations its condition for survival on the market. Because of number of approaches, it is getting more difficult to the fined the term of quality and in side the certain limits of per-given tolerance can be easily defined and totally clear. Shelf-life it is consequence of many factors, one of them is a storage temperatures. This paper present influence of storage temperature on shelf-life of two products, kefir and fermented milk with L.acidophilus.
