Turopolje pig-tissue composition and proportions in carcass
Goal of this research was to establish the proportion of muscular (M), fat (F) and bone (B) tissues in carcass by method of total disection as well as the fariy acid (FA) composition of MLD intramuscular fat and backfat (BF) by gas chromatography. Revival and in-situ protection of this breed started 1994 in Croatia. Turopolje pig breed is the oldest Croatian autochthonous and one of the older European pig breed for the outdoor system. In the ecosystem of flood forests of Quercus robur, and the deschampsietum caespitosae meadows and continental climate hogs were produced (n=10, castrates) by old Croatian technology of low input of nutritients in ecosystem. Masses (kg of hogs and carcass were 83. The percentage of tissues in carcass were resp.: M 36.8, F 35.3, B 11.1 and IMF 3.03 in MLD. The content of FA (%) in MLD and BF were resp. SFA 39.30, 37.22, MUFA 54.96, 50.56, PUFA 5.74, 12.22.
